| Bioactivity | Palatinose (Isomaltulose) is a disaccharide made up of glucose and fructose. Palatinose can be isolated from honey and sugar cane, with only half as sweet as sucrose. Palatinose instead of sucrose is beneficial to reduce the development of caries in animals. |
